In a greased 9×13-inch baking dish, layer half of the sliced potatoes. Top with half of the beef and veggie mixture, then repeat the layers.
Cover with foil and bake for 40 minutes.
Remove the foil, sprinkle cheddar cheese on top, and bake for an additional 10-15 minutes until the cheese is melted and golden.
Let cool for a few minutes before serving.
